Why is hockey so un-watchable?

Hockey is not unwatchable! Once you watch more and become more knowledgable you will be able to see the puck, if you can't you will be able to guess where it is, and you will be able to anticipate goals. And even if its 4-0, there is always a chance for a comeback, and usually the games are close.
